Trang:A local entrepreneur has expanded the culinary possibilities of "Trang Roast Pork," a Geographical Indication (GI) product of Trang Province, by developing it into a variety of new dishes to enhance its value and offer consumers more options.
According to Thai News Agency, Ms. Nattasinat Chaijak, also known as "Jae In," the owner of Kanittha Cake Shop and a TikTok creator under the name "E-So Ban Na," has creatively transformed Trang-style grilled pork into innovative dishes. These include Trang-style grilled pork salad, stir-fried grilled pork, and grilled pork leg stew with cha-muang leaves. Notably, the grilled pork salad previously earned her a first prize in a culinary competition, distinguished by its use of local ingredients such as Trang-style grilled pork, Palian peppercorns, and Khao Baoyod Muang rice.
Ms. Nattasinat aims to diversify the use of Trang-style roasted pork beyond breakfast by creating dishes that balance flavors and incorporate local produce. The grilled pork salad, for instance, combines sourness to complement the sweet and salty pork, while the stir-fried pork emphasizes rich Southern Thai flavors. Meanwhile, the stewed pork leg with cha-muang leaves enhances its taste with cha-muang leaves and black pepper. Priced initially at 190 baht per set, these dishes not only add value to Trang-style roasted pork but also support local farmers by using home-grown ingredients. Ms. Nattasinat plans to promote these dishes at events in Trang Province and other locations such as Thung Song in Nakhon Si Thammarat Province, Surat Thani Province, and Chiang Mai Province later this year.
